Homemade Gourmet Recipe: Stuffed Puff Pastry Recipe

- 1/2 cup butter or oleo (1 stick) cut into pieces
- 1 cup water
- 1 cup all-purpose flour
- 4 large eggs
- 1/4 teaspoon salt
DO THIS FIRST - Preheat oven to 400 degrees. Grease and flour cookie sheets.
In saucepan combine butter, water and salt; heat over medium-high heat until butter melts and mixture boils.
Remove from heat, add flour all at once and with wooden spoon vigorously stir until mixture leaves side of pan and forms a ball.
Add eggs to flour mixture one at a time, beating well after each egg is added, until mixture is smooth and satiny -- shape into small balls (tablespoon size).
Drop onto sheet --keep an inch or two apart. With moistened finger gently smooth top. Bake until golden -- about 35 minutes (check often) -- remove from oven and with tip of knife make small slit on side to release steam.
Turn off oven. Return puffs to oven with oven off and let stand 10 minutes. Puffs can be made ahead and stored in a freezer bag in freezer until needed.
The final step is filling the Puffs. Suggested filling:
- egg salad, tuna salad, chicken salad (dill or with mandarin oranges)
- Any kind of cold cuts but put condiments between slices of meat so they don't make puffs squishy
- Seafood salad -- shrimp (pre-cooked) with surimi (fake crab), celery, lemon-pepper with mayo
